Peruvian Chik’n and Rice Soup
Ingredients
- 1 T avocado oil or olive oil
- 1 lg poblano pepper, cored and diced
- 1 sm white onion, peeled and diced
- 1 T aji amirillo paste (or 1 serrano or jalapeno pepper, cored and diced)
- 5 cloves garlic peeled and minced
- 1 c no chicken or vegetable stock, divided
- 1 can jackfruit (drain completely to removeall liquid, then shred with fingers)
- 1 lb golden Yukon potatoes diced
- ½ c quinoa
- ½ c peas
- 2 t ground cumin
- 1 bunch fresh cilantro
